<p style="margin-bottom: 0in;">Legumele se pun la fiert in apa clocotita cu sare, in ordinea duratei lor de fierbere. Cand sunt complet fierte se strecoara prin sita de zarzavat si se pune din nou la fiert circa 0,3 l zeama limpede in care a fiert separat zarzavatul. Cand acesta clocoteste se adauga fulgii de ovaz fierti in apa si pasati. Se mai lasa sa fiarba in cateva clocote.</p>
<p style="margin-bottom: 0in;">Inainte de servire se adauga galbenusul de ou frecat cu lapte si unt.</p>

Inainte de servire se adauga galbenusul frecat cu lapte si subtiat cu supa de zarzavat si untul.</p>

<p style="margin-bottom: 0in;"><em>Supa de oase limpede 400 ml, morcov 70 g, telina 30 g, patrunjel radacina 30 g, sare 2 g, verdeata tocata marunt. </em></p>
<p style="margin-bottom: 0in;"><em>PENTRU GALUSTI: Gris 12 g, ou ¼ buc.</em></p>
<p style="margin-bottom: 0in;">Se pun oasele sa fiarba in apa rece. Pentru a obtine 400 ml de supa se pun la foc 800 ml de apa. Daca supa scade prea mult, in lichidul care clocoteste se adauga apa fierbinte pentru ca supa sa nu se tulbure. Ca sa se faca o extractie cat mai concentrata de oase, acestea se pun la foc dupa ce au fost sfaramate. Se lasa sa fiarba 4 – 6 ore. Sarea se adauga la supa cand aceasta este aproape gata. Se spumeaza supa de cate ori este nevoie. Zarzavaturile se adauga in supa de oase in ordinea duratei lor de fierbere. Cand acestea au fiert incat pot fi usor patrunse cu furculita, se strecoara supa si in lichidul limpede se adauga galustele de gris.</p>
<p style="margin-bottom: 0in;">Galustele se prepara in felul urmator: albusului batut spuma i se adauga amestecand usor galbenusul si apoi grisul turnat in ploaie. Din aceasta compozitie se iau cu lingurita umezita portii mici care se introduc in supa clocotita.</p>
<p style="margin-bottom: 0in;">Se fierb la foc incet acoperite cu un capac, timp de 10 minute.</p>
<p style="margin-bottom: 0in;">La ultimul clocot se adauga verdeata tocata marunt.</p>
